
1 lb. sweet potatoes (cooked or canned)
1 c. light brown sugar
1/4 c. water
2 1/4 c. Bisquick
Cool and peel sweet potatoes (or mash if using canned). Mix together sweet potatoes, brown sugar, biscuit mix, and water. Combine ingredients thoroughly (I used a hand mixer). Mixture will be more moist than regular biscuits. Flour table, roll, and cut biscuits. (OR take my approach... just drop them by spoonfuls onto the pan! Hence the biscuit "drops". :D ) Place on greased cookie sheet and bake in preheated oven for 16-18 minutes at 350 degrees F. Since the biscuits are moist, they do not raise much -- keep a close eye so they do not over cook.
Yield 1 1/2 dozen.
I like them best drizzled with a blend of butter and brown sugar, like this:
