Sensational Salsa

This is a fabulous fresh salsa recipe I found a couple of weeks ago. I realize that fresh salsa is more of a summer-type dish, but I can guarantee you I will be hitting up our local farmer's market all winter (except the 2 months they are closed) to make this recipe!

Sensational salsa

Recipe:

6 roma tomatoes, diced
3 fresh jalapeno peppers, seeded and chopped
(CAUTION: Use small jalapenos or just 1-2 larger ones... the first batch I made was HOT!)
1/4 red onion, chopped
3 green onions, chopped
2 cloves cloves garlic, crushed
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
1 small jicama, peeled and chopped
1 (10 ounce) can diced tomatoes with green chilies, drained
salt and ground black pepper to taste

Mix together all ingredients and allow to sit at least 1 hour before serving. You may also season with S & P to taste if you like.
